
Coconut Mojito
Creamy, white coconut milk joins with Domino® Golden Sugar and your favorite rum in this sweet, summery cocktail. Fresh mint and a squeeze of lime brighten its flavor like the shining sun overhead.

Ingredients
For the Coconut Syrup
- 1 cup Domino® Golden Sugar
- ½ cup Water
- 1 can (13.5 oz) Coconut milk, unsweetened
For the Mojito
- 4 leaves Fresh mint
- 2 ounces Rum
- 1 ½ tablespoons Lime juice, freshly squeezed
- 1 ½ tablespoons Coconut syrup
- Ice
- Club soda
- Mint sprig, as garnish
- Lime slices, as garnish
- Fresh coconut pieces, as garnish

Instructions
Step 1
Prepare the coconut syrup. In a small saucepan, combine sugar, water, and coconut milk. Bring the mixture to a simmer and stir until all the sugar dissolves. Remove from heat and allow the mixture to cool down.
Step 2
Add 4 mint leaves, rum, lime juice, and coconut syrup into a highball glass. Crush the mint using a muddler to release mint oils.
Step 3
Add ice and top with club soda. Stir. Garnish with a mint sprig, lime slices, and fresh coconut. Enjoy!
ADDITIONAL TIP
Store the leftover coconut syrup in an airtight container in the refrigerator. The syrup can be stored up to 1 week.
